Hi everyone!  I hope you enjoyed your Valentine’s Day.  Thanks for visiting my blog and checking out Gluten-Free Wednesdays.

Monthly Challenge:  February’s challenge is to make a loaf of gluten-free yeast bread.  I have been behind on this challenge, but I did make a loaf of bread yesterday.  It was okay, but I need to keep working on it.

I'm glad to have found your carnival! I've submitted my Baked French Toast with Almond Butter and Bananas, because you'd never know it was gluten-free or even healthy. Delish!
 
The cookies look great! Oats were a tough one for my son to learn how to not eat. It was easy for him to avoid wheat. I had to explain to him that oatmeal treats that came out of our kitchen were safe. Oatmeal treats that came from anywhere else were not. Thanks for sharing and for hosting this party every week.
 
I never was a big fan of bread so perfecting a gluten free loaf really hasn't been a high priority for me. But I do have my recipe for rotini in pumpkin sauce this week.

Happy Wednesday Linda! This week I am sharing my recipe for Green Bean Salad With Fennel, Dried Blueberries and Blue Cheese. The flavor combination is amazing! I hope people will try it even if they have not had fennel (anise) before. The key is to buy smaller fennel bulbs if possible and make sure it is really fresh when you buy it.

Linda-I'm sharing a new GF/Grain-Free salmon cake loaded with carrots, potatoes, and spinach. This is also the first post on my new and under construction WordPress site. I'm still working on making the move from Blogger, but decided to just go ahead and start posting in the midst of the upheaval. I'm working on bread and hope to get a success to post about before the end of the month. Crossing my fingers. Now I just need to figure out my posting identity.

In response to the harsh winter we've been experiencing, I resorted to comfort food this week: Lasagna with Spinach. Might as well have the oven on for something I really like!
 
I was recently told that I can't eat gluten so I am just learning what I need to do to go gluten free. I LOVE bread and pasta so I am really happy whenever I can find gluten-free versions. I can see that I will be making more stuff at home now to stay gluten free. I even have two (or three) breadmakers so I will be trying out all the recipes here.
