Gluten-Free Wednesdays 1/19/11
It’s that time of the week again to round up some terrific gluten-free eating recipes and ideas. I hope you’ll share your link with us and visit some others.
Monthly Challenge: January’s gluten-free challenge is to make a gluten-free biscuit. Each week I look for challenge recipe that have been linked up to the carnival and highlight them the following week. You can see my challenge entry below.

Happy Wednesday Linda! I am sharing my recipe for Meyer Lemon Cookies. They are gluten free but can be made with "normal" flour if you don't have an issue with gluten.

Your biscuits look so good! I love how you determined that patting the dough out works just as well as rolling it out. :-)
I'm still on our road trip to the southwest. I've linked up my Top 10 discussion posts plus a few extras, including your year-end roundup, too. ;-) The posts include reminders and awareness on spelt, oats, eating out, and much more.
BTW, I did attempt to make my popovers into sandwiches per a reader request before we left home. They didn't rise enough in the larger size so I'll keep experimenting, but they made some divine open-faced sandwiches. That was my "biscuit" experimenting recently. ;-)

Okay, looks like I need to get working on my biscuit recipe! I'm running out of Wednesdays :) This week I linked up my post with 3 homemade popcorn recipes!

No biscuit recipe from me Linda, sorry. I never did make great biscuits, even before gluten free. It's cold and snowy here so I posted some ideas for making soup. Biscuits would be good with soup, but I guess we'll have to have muffins.
