Gluten-Free Wednesdays 10/6/10

Gluten-Free Wednesdays2

Welcome to Gluten-Free Wednesdays, a blog carnival of gluten-free eating ideas.  Please add a link to your gluten-free recipe, review, or other information on gluten-free eating.

October’s Challenge:
Create a Gluten-Free Loaf of Quick Bread – I’ll be looking out for and highlighting challenge posts that are linked up during the month.

Last Week’s Highlights: I’m highlighting pancake (crepe) and waffle links from September’s challenge, and a quick bread recipe since it goes with this month.
Buckwheat Crepes from Jenn Cuisine
Basic Pancakes from The Daily Dietribe
Oatmeal Peanut Butter Waffles from Non-Dairy Queen
Apple Bread from She Let Them Eat Cake
Squash Fest:  Don’t forget to stop by on Thursdays for a guest post on squash.  Last week Wendy of Celiacs in the House shared a recipe for Curried Roasted Butternut Squash Soup.  This week, I’ll have a post from Carrie of Ginger Lemon Girl about how to roast a squash.

My Submission:  This is a easy, moist, and tasty chicken dish.

Slow Cooker Chicken Cacciatore

The Carnival:  If you’re new, please read the guidelines.  Remember to leave a link back.  I know people forget, as I sometimes do.  If you are not willing to add a link after I remind you, then your link will be deleted.  I’m sorry to say, it does happen.  I love seeing everyone’s submissions, though, and I hope you are able to visit some of the links and leave a comment.  Thanks for participating!

For some reason I can't get the link widget to display any pictures that I choose as thumbnails. I've tried just selecting, just cropping, different pictures, nothing seems to work :( But I decided to link up on my post anyways!

I wanted to share with you this week my post about GF Substitutions Part 13 - Making and Using Gluten Free Bread because I share one of my favorite tips about using quickbreads!

I like to make a quickbread like zucchini or pumpkin bread, cut way down on the sugar to turn it savory rather than sweet, and then use it for sandwiches, paninis, etc. I often have much better success w/ quickbreads than yeast ones, so it's one trick I've adapted to make some consistently tasty sandwiches :)

Thanks for hosting; I always discover so many great gf recipes! I will be trying your slow cooker chicken cacciatore very soon!

A cookbook review this week and a video that actually has the recipe on it. This dish turned out so well. It will be on our menu rotation all winter. Easy and satisfying.
Thanks for hosting and including the link-up reminder in your post. Some of us need it. :)

Thank you so much for linking up my recipe for apple bread. I was looking at last month's challenge and thinking about how this week's recipe would've fit perfectly! And then I saw this month's challenge and thought how the apple bread would work perfectly! But it was a week too late! Ahhh! I'll get it right soon!

I linked up the sweet potato fries I made from my adoption of Jenny at Creative Cooking Gluten Free. Yum! So sad those are gone, but I'll be making more.

Those recipes you highlighted sound so scrumptious!

Hi Linda, I linked up my adoption post of Jenn Cuisine and her Fig and Apple Roasted Pork Loin and Buttery Pan-Fried Butternut Squash.
Love all the recipes you highlighted from last week! They look great!

Linda, I've posted my Taco Salad on Spring Lettuce Mix. It's part of my October:Unprocessed pledge.

Some of these other recipes have my mouth watering already. Both quickbreads and squash are old favorites of mine, so this looks to be a great month!

I'm still stuck in pancake month :)

I'm trying to get back into the habit of posting recipes and participating. I'm looking forward to some cooler days, so I can jump back into baking.
