Gluten-Free Wednesdays 10/20/10

Gluten-Free Wednesdays2

Last week proved busier than I thought and I didn’t get to visit all your links, but I will this week.  Thanks for all the well wishes for my mom.  Her surgery went well and she is recovering well.  I spent most of the week at my parent’s home (or at the hospital) and they enjoyed having me cook for them.

October’s Challenge: Create a Gluten-Free Loaf of Quick Bread – I’ll be looking out for and highlighting challenge posts that are linked up during the month.  I have not yet been able to make a single quick bread this month, but I hope to this week.

Last Week’s Highlights:
Banana Pumpkin Loaf with Coconut Flour from Gluten Free A-Z Blog
Holiday Pumpkin  Bread from Gluten Free & Loving It
Vegan Pumpkin Bread from She Let Them Eat Cake
Squash Fest:  Don’t forget to stop by on Thursdays for a guest post on squash. This week we’ll hear from Alta of Tasty Eats At Home with a stuffed acorn squash recipe.

My Submission:  I don’t have a recipe of my own to submit this week, but I do have a guest post from Lynn of Lynn’s Recipe Adventures.  This is a great dairy free recipe.

Coconut Milk Custard

The Carnival:  If you’re new, please read the guidelines.  I love seeing everyone’s submissions, and I hope you are able to visit some of the links and leave a comment.  Thanks for participating, and don't forget to leave a link back.

Still trying to perfect my loaf of fall goodness. I'm getting there :) Hopefully this weekend (if I can find fresh cranberries ANYWHERE! Never thought that would hold me back in my autumn baking).

@ Stephanie, I found fresh cranberries at Costco.

I am submitting my pear bread recipe for the quick bread challenge. I am planning on making a couple more quick breads this week. Quick breads are such a fun indulgence! Your challenges are good for me!

I am linking up my Cinnamon Raisin Oatmeal Breakfast cake this week!! Thanks for another week of hosting! ;)

Glad your mom's surgery went well! I'm linking up my quick bread for this month!

Still trying to think of what I want to do for my quick bread. I'm having fun creating again, so hopefully, some inspiration will hit this week.

Glad to hear that your mom's surgery went well.

Hi Linda, I'm so glad to hear your mom's surgery went well! No surprise that your parents loved you being there cooking for them. ;-)

I've linked up an accidental granola recipe. Thankfully, it was the kind of accident one wants to repeat. :-)

Think I've figured out my quick bread recipe ... just in time, right?

Hugs,
Shirley

Hi Linda - I'm glad to hear life is getting back to normal for you and your family. Thank you so much for linking up to my vegan pumpkin bread! This week I have a yummy vegetarian chili to share.

Hope you like my latest loaf. I am into Fall type loaves.

So glad your mom is doing better!

I'm glad there's good news about your mom! After as busy a week as you must have had, you probably need a whole week of "comfort food" now! Or maybe just some "comfort" after too much hospital visiting.

My quick bread recipe is still on the way...I'm down to the final tweaks. Being under the weather a little didn't help my baking plans lately. My husband even helped me a little with my post, but he doesn't do the cooking stuff -- just a little writing now and then.

Hi, I went back to link you up and you had been on both blogs. The boxes were empty, though.

I did it again. I hope they stay, this time.

I can't imagine how you disappeared on both the blogs.

IF the empty boxes were not there, I would have thought, I just forgot it but I remember linking you up. Sorry for the confusion.

Hi Linda,

Oh, I almost missed it this week. I thought today was Wednesday. Got it in. I'm linking up my improved (gluten-free this time) Carne Asada Stew.

I'm glad to hear your mom is doing better. I have been out of it, lately. I'm sorry I didn't get to wish you well pre-surgery.

Thanks for hosting, as always.

xoxo,
Tia
