Potato Zucchini Mash

If you are looking for a way to get vegetables into your picky eaters, here’s one way that might work.  My family asked what the green flecks were in the potatoes, but nobody complained.  One didn’t particularly care for the onion, but another really liked the onion.  The zucchini didn’t bother anybody.
Since the zucchini gets cooked and mashed, it’s fine to use a zucchini that has gotten too large for other eating.  That’s what I did.  I did, however, remove the middle seed section of the zucchini.  That’s up to you.

Potato Zucchini Mash

Peel, cook, and drain potatoes.  I cooked mine in a pressure cooker, but use whatever method you normally use for mashed potatoes.  While the potatoes are cooking, combine the milk, zucchini, and green onion in a small saucepan.  Heat to a simmer, cover and cook 5 – 10 minutes until the zucchini is soft. Use a hand masher to mash the zucchini mixture.  Add this along with salt and pepper to the potatoes and mash the potatoes with a hand masher or electric mixer.

Yum! I never would have thought to add zucchini to the potatoes.
 
I've got four zucchini that got over-grown while we were away on vacation, so thank you for a great recipe to use them in! It sounds scrumptious!!

Wonder if this would work on my kids! My husband would turn his nose up - but then again, he likes plain, no skins, no lumps, mashed potatoes. Yawn!
