What can I eat that’s gluten free? Soup Challenge

I hope you all enjoyed February’s soup challenge.  This is the week to link up all your great soup recipes.  If you didn’t do the challenge, you’re welcome to link to a different type of post. 

This week I want to highlight a soup recipe that a reader, Nancy, sent to me.

Minestrone Soup

Coat large saucepot with cooking spray.  Over medium heat, cook onion until tender, 5 to 8 minutes.  Add broth, green beans, carrots, zucchini, cabbage, tomatoes and their juice, and next 6 ingredients.  Over high heat, bring to a boil.  Reduce heat to low; cover and summer until vegetables are tender, about 20 minutes.  Add beans and heat through, 3 to 4 minutes.

Makes 16 cups – Per cup: 67 calories; 5 grams fiber; 1 gram fat

That soup looks really good.

Your soup looks delicious. I could even use my home made noodles. I've been wanting to make them. :)

My hubby made an awesome soup last week that I was going to submit. I've got a great picture but I never did sit him down and get the recipe. :( Maybe next week!

Hi there! I just posted my gluten free potato soup recipe and as I type this realized that I forgot to put the badge! Oops! Off to do that. :)
 
I shared a vegetarian and dairy-free recipe for un-chicken soup I made recently. It's so tasty I made it again in February- but didn't blog about it again. Anyway, hope you enjoy!

I pulled up a recipe that was on my recipe blog to join this week.
 
I'm late to this soup "pot luck," but finally here. ;-) I made Stephanie O'Dea's black-eyed pea soup, but modified it to my taste and to feed a crowd and added what I had on hand. Can't wait to check out all the soups here!

I was sick this week so I'm a bit late getting in. The soups sound delicious. I've been eating a lot of soup lately.
I didn't get the post written for the one I'd planned for this so I linked to an older post, but it's the quickest soup ever, and it's oh so good.
 
I am so excited to find you blog. I just added a link to Lentil soup that is a favorite at our house - even with the kids.
