Stovetop Tater Tot Casserole – What’s for Dinner

The other night I was in the mood for a good tater tot casserole, but I didn’t want to heat up the oven. I figured that since everything I put into it is already cooked, except the tater tots, I could do it without the oven.

I cooked the tater tots in an electric skillet which was a trade off because then they were cooked in oil (less healthy but oh, so good). It turned out well and really hit the spot.

Gluten-Free Tater Tot Casserole – Stovetop version

Ingredients

Instructions

In an electric skillet or large stovetop skillet, cook the tater tots in oil. I covered the bottom of the skillet but did not add the 1/4 inch of oil the bag recommended. tater tot casserole 1

Brown and drain the ground beef in a skillet. Remove the beef to a bowl. Add a little oil to the skillet and add the onion and pepper. When almost cooked, add the mushrooms and cook until tender.

While the other parts are cooking, make the batch of cream soup, or use store bought if you have it. Add about 1/4 cup liquid to the soup to thin it a little. Combine the beef, veggies, and soup in your skillet or a pot and make sure everything is hot. Spread this mixture into a rectangular baking dish and put the tater tots on top. Serve and enjoy!

Looks good! I used to make a tater tot casserole before kids and before going gluten-free. I noticed that you have green beans on the side. When I made mine, I put the green beans in the casserole. (My kids would probably like it better on the side.)
 
I always assumed that tater tots are not gluten-free. I guess I never looked at the ingredients! I love tater tots and I've never had them in a casserole before, but it sounds delicious. Thanks for the idea!

Cream soups...I almost feel out of my chair AND dropped my coffee. I guess I never thougth about making them myself to use in a casserole. I don't know why as I make tons of cream soups. So HAPPY to have a recipe that works in casseroles.
I'd love to take a big bite of your casserole - it looks yoummy! Alas, I don't eat white potatoes. They make me crazy. I would probably just substitute some brown rice and veggies.
 
I have found more than one brand of tater tots to be gf. Always check ingredients. I contacted Ore Ida about theirs and will post their response when I hear back from them.
 
We buy Wegmans brand "Tater Puffs." They are clearly labeled Gluten-free on the bag. I know that doesn't help any of you out West, but for those with a Wegmans nearby check 'em out.
 
Thanks! I'll look into which brands are GF out here in the Pacific NW. I'm excited, and I have new hope for my tater tot cravings.
 
Wow, really cool idea. We love tater tots around here. I've pulled them apart to coat chicken before but not made them into a casserole. Now I have to try that too!
