Leftover Roast Beef – What’s for Dinner Wednesday

This week I decided to repost a dinner idea that I wrote about months ago.

I recently cooked a large roast that turned out a little dry and tough. It was okay, but nobody really wanted it for leftovers. Here's what I often do in those situations.
ground roast beef
Cut the beef into chunks and put it into a food processor. Process until finely chopped. You could try a blender if you don't have a food processor or just chop it finely by hand. I then use the beef in one of the following ways:

The problem of the meat being tough is solved by chopping it up, and the dryness is solved by putting it with something moist. My family enjoys the variety and flavor it adds to these dishes.

I love reheating it with BBQ sauce, so delicious. I like it on a bun, but you could do cornbread...

Hi! Don't really find myself with leftover beef very often...but the idea of BBQ, taco meat, and casseroles all sound good.

Hey that's perfect I will have to try this, the boys have suddenly decided they don't like crock-pot beef and I'm not giving it up! :)

I usually try to slice it very thin and use lots of mayonnaise on my sandwiches when the beef comes out dry. This is a traditional family sandwich recipe! Your suggestions sound very practical. If I ever get sick of dry-beef sandwiches (on dry GF bread of course) I'll try your ideas!

Dinner rescued once again. Clever.
Vegetable beef soup, slow simmered and small chunks of beef usually my cure for a tough cow.
 
Don't usually have just left over roast beef but if I did I'd be wacking a bit of salsa on it, throw some veggies in and turn it into a special mexican that'd be really quick n easy to make.
 
My wifes family is from western Pa and one of their favorite sunday meals is to make the roast in broth and then when its done cooking grind it up and put it back into the broth and serve hot on a bun with tomatoe slices and sometimes mayo .
