Gluten-Free Wednesdays 2/2/11

Gluten-Free Wednesdays2

We had a great round up of gluten-free eating ideas last week.  Thank  you everyone for your participation.

Giveaway:  This week’s giveaway is the book Go Dairy Free by Alisa Fleming.  It’s a terrific resource for those who are dairy free or thinking about it.

Monthly Challenge:  January’s challenge was to make a gluten-free biscuit.  You can still submit biscuit recipes this week and I will highlight them next week.  Look for February’s challenge to be posted on Thursday.

Last Week’s Highlights:  We had one lonely but great looking biscuit recipe last week.
Grain-Free Biscuits from Chickiepea’s Blog

My Submission:  I thought it was time to post a breakfast recipe, and this is a good one.

Hi Linda! I hope you are staying warm!
This week I am sharing my recipe for Dairy Free Chocolate Ice Cream. You would never guess that there is no dairy in this recipe if you taste it-it's amazing!
Thanks for hosting!
Linking my gluten-free granola cookies/bars and chocolate mousse. I enjoyed the biscuit challenge- thanks for featuring us! :)
I LOVE your baked oatmeal idea - I wish I could find certified GF oatmeal here, I have no idea if oatmeal in Europe has the same cc issues with gluten as in the US, but we haven't tried any just in case...
Lots of good stuff, as usual, Linda! :-) I linked up a product review of GoGo Organic Pear Juice and a recipe for a green smoothie sweetened with it and an apple--delish!

Here's my Corn, Tomato, Celery & Onion Salad, a quick and easy lunch or side dish that's GFCF, and I can still find the ingredients for it in my refrigerator/pantry even when the roads are icy and snow-covered (like now).

I wish I'd been more creative about your biscuit challenge -- I'd love some good biscuits, but I was still overfull from the holidays! Not much baking went on all month -- certainly not enough to test a new recipe. My loss :(

I'll be trying some of the biscuits that were linked before too much longer!

Everything looks amazing as usual! I added a Mixed Bean Quinoa Salad with Spinach and Tomatoes. ...and I realized that I forgot to add my name to the description. Whoops!
I linked up my dairy free "milk" shake. Nice way to fool your taste buds that you are indulging more than you are. Thanks for hosting!

Hi Linda - I'm back this week with an Oatmeal Chocolate Chip Cookie! Looking forward to February's challenge!
Yum! I really like baked oatmeal. I rarely make it for some reason. I'm thinking I may need to make some this week. :)
Wow! These are amazing gluten-free food ideas! I'm sure if quinoa's in the list, a lot of people will love it too! Thanks for sharing these yummy and healthy food ideas. :)
