We had a great round up of gluten-free eating ideas last week.  Thank  you everyone for your participation.

Monthly Challenge:  January’s challenge was to make a gluten-free biscuit.  You can still submit biscuit recipes this week and I will highlight them next week.  Look for February’s challenge to be posted on Thursday.

I LOVE your baked oatmeal idea - I wish I could find certified GF oatmeal here, I have no idea if oatmeal in Europe has the same cc issues with gluten as in the US, but we haven't tried any just in case...

Here's my Corn, Tomato, Celery & Onion Salad, a quick and easy lunch or side dish that's GFCF, and I can still find the ingredients for it in my refrigerator/pantry even when the roads are icy and snow-covered (like now).

I wish I'd been more creative about your biscuit challenge -- I'd love some good biscuits, but I was still overfull from the holidays! Not much baking went on all month -- certainly not enough to test a new recipe. My loss :(

I'll be trying some of the biscuits that were linked before too much longer!

Everything looks amazing as usual! I added a Mixed Bean Quinoa Salad with Spinach and Tomatoes. ...and I realized that I forgot to add my name to the description. Whoops!

Yum! I really like baked oatmeal. I rarely make it for some reason. I'm thinking I may need to make some this week. :)
