Life is quieting down a bit now that the holidays are over.  I enjoy winter and could spend all day snuggling with my dogs in front of a fire while reading a book (or a blog).  That hasn’t actually happened yet this winter, at least not the all day part, but the pace has slowed.  We have a light snow fall as I write, and that’s one of my favorite experiences of winter.  I hope life has slowed down a little for you too and that you are enjoying these January days.

Recipe Contest:  Would you like to win an iPad?  That’s the prize for the Everyday Health gluten-free recipe contest. So far there are not a lot of entries.  If I was not a judge for the finalists, I would be on top of this!

Monthly Challenge:  January’s challenge is to make a gluten-free biscuit. I got to work on the challenge over the weekend and made biscuits twice.  The first batch wasn’t bad, but it wasn’t what I was looking for.  The second batch, however, turned out just as I had hoped.  The post is still in draft form and should be posted on Monday.

Last Week’s Highlights:  There weren’t any biscuit entries last week, and I don’t expect there will be as many as there were cookie entries last month.  So this week I thought I would highlight a couple of new participants.

Since we've had visitors lately, I haven't had much opportunity for baking biscuits yet, but I'm ready to try a few batches now! I entered Tomato Bean Soup, a quick and easy GF,CF soup for crockpot or stovetop. Wouldn't biscuits go well with that?!
 
I haven't forgotten about the biscuit challenge. Will probably have to be that last week of January though as we're getting ready to go out of town.

I linked up my green smoothie challenge from the D-Tox January event. I'll show anyone who enjoys a good virgin pina colada how to transition that to a "greena" colada in one easy step and they'll love the end result, too. Come one, come all, to take the challenge! ;-)

I don't know how to make a traditional biscuit, much less a gluten free one....sure would like to eat one though. ;) Guess I need to do some experimenting.....
 
Everything looks so tasty!

I'm excited about the biscuit challenge as biscuits are the token thing I can bake without a recipe. I might try making a vegan version if I'm feeling inspired...
