Make a Gluten-Free Cookie Challenge
The pie challenge was perfect for November, and cookies just seem appropriate for December. I hope you think so too, but I promise that January’s challenge will not be a dessert!
When I originally started these challenges, the focus was on creating something new, like your own casserole. I have shifted that focus the past couple of months to simply making a gluten-free version of something. If you create a completely new cookie, that’s great, but there are already so many cookie recipes out there. The challenge for most of us is taking our old favorites and turning them into a gluten-free cookie that we can safely enjoy. You may have other dietary restrictions that make a conversion even more challenging.
For this challenge, you might take a gluten-free recipe and change it to meet your tastes. Maybe you will use different flours or make it grain free. You could also take a gluten-filled recipe and adapt it. Many cookie recipes do quite well by just substituting a gluten-free flour mix and adding a little xanthan gum. Not much gum is needed for cookies and some don’t need any at all.
To participate in the challenge: Just post your recipe and link it up here at Gluten-Free Wednesdays any week in December. I’ll be looking for cookie recipes to highlight. Just to be clear, I’m looking for cookies and not candy, but I will include cookies made in bar form and no bake cookies. I will not be highlighting fudge or truffles or similar items. Feel free to share them as part of the carnival though!

Yes, GF Cookies galore. Perhaps someone will post a jam-filled cookie recipe. I haven't ever made any, but my mother gave me all this peach jam this year...maybe I'll be the one to post this kind of recipe if I figure one out...
