Gluten-Free Wednesdays 9/8/10

As I write this post, the gluten-free diet is weighing on my mind in a new way.  My oldest son (19) has developed symptoms of celiac disease.  We saw a doctor today and will hopefully get lab results in the next week.  But already, I have gone out and bought him gluten free bread and snacks because he just feels better when he doesn’t eat gluten.  I won’t have him go completely gluten free until all testing is done, but it’s better if he eats it in the evening since it makes him tired.  I’ll keep you posted on what we find out.

With that in mind, I thought I would highlight a few recipes from last week that I think my son would like.

Linda, I am so sorry to hear about your son. Luckily he has the best mom-detective on the case!

For this week, I linked up my Meatloaf Muffins with Brown Sugar Glaze. They are gluten free, dairy free, and easily can be made egg-free, too!

I am so sorry to hear your son is having trouble with gluten as well,but I think it is better to know early in life. I spent most of my 20s tired and with joint pain, with constant digestive unhappiness (nothing awful, but never felt great either), and in hindsight, gluten intolerance likely had a lot to do with it :(

I linked a recipe of brown rice and azukis - sorry if it is a little boring sounding (and looking) but it sure is tasty :)
 
Your son is blessed to have a mom who already knows how to cook gluten-free! Finding and creating gluten-free versions of a person's favorite foods makes the transition to gf diet much easier! You will probably find some recipes that he'll like in Cooking for Isaiah.
 
Kids like fried chicken. Plus it's great cold, the next day.
 
I am thinking of you as you go through this testing phase with your son. Good luck with everything.
 
We've faced some uncomfortable situations at our house lately, too. And it's never easy...never. After working through my feelings about them, I'm always able to find a blessing. I know that you and your son will find the blessing, too. I'm sending prayers, Linda.

I agree with Alea that your son is lucky he has a Mom that knows about gluten-free eating. Today I have posted a gluten-free granola recipe that highlights soaked nuts and seeds. This makes them easier to digest because nuts can be hard on our digestion.
 
Linda, your post hits home today. Son (22) called at 7:00 am this morning and we had a long talk about him still not feeling great after being gf for 2 1/2 years. Honestly, I think he still gets gluten a fair amount and that's contributing to his issues. He doesn't think so, but he's just not as vigilant as he could be. Still, I know it's hard for him. Also, I don't think he eats great so that contributes to his issues. Anyway, sending all good thoughts to your son and you. You will be instrumental to him, that's for sure.

I linked up my Adopt a GF Blogger post, in which I adapted one of the many wonderful waffle recipes from Iris (The Daily Dietribe). Yummy breakfast and savory waffles (great for sandwiches!). :-)

my daughter 19 has the same and while it is difficult for them to adjust at first they realize that they can do it and feel better as well.

I agree with all of the other comments. I am thinking good thoughts for you and your son, but if he does have Celiac Disease, at least he has you to help him.

I'm sorry to hear about your son. As you probably already know, the only definitive way to diagnose a gluten allergy is to see if your symptoms subside on a gluten-free diet. :( If you haven't read it, I highly recommend the book _Healthier Without Wheat_ by Dr. Stephen Wangen. He has a whole chapter devoted to various tests and their accuracy in diagnosing Celiac.

I'm linking to my Pepper Steak recipe this week. It's gluten-free, dairy-free, corn-free and easily rice-free if you sub quinoa for the rice, and soy-free if you skip the tamari and add a little extra seasoning and salt.
 
If you haven't already read it, please read the book _Heathier without Wheat_ by Dr. Stephen Wangen. He has a whole chapter devoted to the accuracy of tests for Celiac and gluten intolerance.

Best of wishes to your son. I hope that they can determine something soon. Better to know early in life than to wait until he has a host of other issues, if it's gluten that is the enemy! And lucky for him, he has you!
