September is winding down and this is the last week of the pancake or waffle challenge.  Be on the lookout for October’s challenge and a book giveaway (not a cookbook) coming up soon.

Last week’s gluten-free carnival had lots of terrific recipes and tips linked up.  I’m loving the picture linkies as I look back over the post.  We had two pancake entries.  One is actually crepes, but that’s close enough.

Those squash pancakes look so tempting! We're trying to cut back on our pancakes and breads, or I'd fix pancakes more often. Actually, the squash pancakes would be okay if we didn't want to put so much syrup on them! Old habits die hard.
 
I'm not a huge GF pancake fan, but I LOVE GF waffles! Unfortunately I don't have a waffle-maker, so I don't have much opportunity to make them. However, with holidays coming up (b-day/christmas), I'm hoping to remedy that situation!

My favorite waffles are almond flour waffles!

As far as pancakes go, I actually did just buy some GF Bisquik, and gave it a whirl. I was impressed! Reminded me of Pancake Sundays from my childhood, when my dad would get up early to make us pancakes :)

I'm excited to see what everyone submits, and will be taking notes for testing out my soon-to-be-waffle-maker :)

Those pancakes look gorgeous! Love the idea of incorporating squash into the batter! This week I am sharing my version of pancakes, buckwheat crêpes with a sweet peach filling - haven't decided if this should be for breakfast or dessert!

I love adding veggies and fruit to my pancakes, too. I made some last night for dinner....they were great.

As I said before, I love those squash pancakes. Anything that tastes like pumpkin bread is good with me! (Your pancakes for breakfast and Amy's pudding for dessert after dinner would be a good day to me!) Zoe's apple pancakes look delish, too--love her video. And, I must check out Breanna's crepes and some of the other entries here that I haven't read yet.
