Zucchini with Walnuts
We’re eating lots of zucchini these days. Friday night one of my kids asked, “Do we have to have it on pizza!?!” Don’t get me wrong, they like zucchini, but a person can get tired of it after a while. I’ll admit that three zucchini plants is too much for our family. I give some away, but I still end up eating it every day at some meal. I serve it quite frequently with dinner, and this recipe has become a favorite, especially for my pickiest eater. He now wants me to make it this way all the time. I can’t complain. It is a very simple and tasty way to enjoy zucchini. Feel free to vary the ingredient amounts to taste.

Zucchini with Walnuts
- 3 medium zucchini
- 1-2 Tb. coconut oil, butter, or oil of choice
- 1/4 – 1/2 c. chopped walnuts, plus halves for garnish
- salt & pepper to taste

I love zukes grilled with a little olive oil and a dash of Italian seasonings. Never thought of pairing up with walnuts. With summer squash in season, this is a great idea for variety! Thanks for sharing!

This is a delicious idea- and I think I may well need lots of zucchini ideas as I have six plants in my garden and they all have tons of baby zucchinis on them!!
This sounds like a great side dish! I agree, sometimes a person can get tired of zucchini. That's when you break out the zucchini bread, muffins, etc! I actually have frozen shredded zucchini when there was an excess, just so I could later make zucchini bread when the mood struck. I've also used it up in my green smoothies in the morning!
That looks absolutely delicious, Linda! I love walnuts and zucchini, but have never had them together. Will try this soon for sure. :-)
I agree with Alta. When you're tired of zucchini in savory dishes, it's time to use it in sweet ones. But have you made zucchini boats yet? Those are fun. The zucchini equivalent of a stuffed pepper. ;-) You can fill them with whatever you like ... we like a sausage, onions, bread crumbs, etc. mixture, but vary to what we have on hand.

What a wonderful flavor combination Linda! I have zucchini coming out my ears and will definitely be trying this as well as some of the other ideas mentioned. I have never thought to freeze shredded zucchini for future use, so I will be doing that too!
This is SO intriguing! Its not something I would have thought up. I love walnuts though; I bet the textures are pretty fun too :)
