Gluten-Free Wednesdays 3-31-10
Welcome back to Gluten-Free Wednesdays! This is the last week of March which means our muffin challenge is ending. Be sure to link your muffin recipes next week. This week, anything goes as long as it is a gluten-free eating idea of some sort.
Last week we had a few pizza related entries so I thought I would highlight them.
My submission this week is a healthy muffin recipe. I was going to save it for next week, but I came up with another terrific muffin recipe for then.

Thanks for highlighting my pizza, I'm glad you liked it! It's so satisfying when you can develop a good GF recipe and use it over and over again consistently...I think my next pizza is going to be a dessert one :)

I participated in adopt a gluten free blogger this month and so today decided I would post the recipe I tried out from Margo at Off the Wheaten Path. Very tasty gluten free enchilada bake.
Those muffins look delicious, Linda! It's been fun to be in muffin mode of late. ;-) I linked up my latest muffins, Honey-Sweetened Corn Muffins, which can be made with sugar or agave as well. My family has loved all the muffins ... they have you to thank for it! :-)
