What can I eat that’s gluten free? Casserole Challenge
On the first week of the month, “What can I eat that’s gluten free?” usually has a theme. This week it is the create a casserole challenge that I gave my readers early last month. Whether you have a blog or not, I hope you’ve had a chance to work on creating a casserole. If you didn’t do the challenge, you don’t have to link to a casserole post because themes are always just a suggestion. If this is your first time participating, please read the carnival guidelines.

I really wanted to make a casserole, but never managed it! I like the idea of the challenge though. I think you should do a challenge each month.

Your casserole is so unique! I tried a casserole a few weeks back for this, and it failed MISERABLY. It was a butternut squash casserole with pine nuts...anyway, it was bland. Blech. If I remember to, I can link up my moussaka though - I just can't get to McLinky at work for some reason.
Oh, I love a good casserole! These look good and the non-casserole dishes, too. Can't wait to sit down after work and catch up with these and last week's roundup!

I didn't have time to make my favorite casserole. However, it is really easy, so I will share my tip: Replace lasagna noodles with a layer of cooked white or brown rice. Layer just as you would with a normal lasagna. The results are wonderful!
I HAD to post the cucumber peanut salad after I noticed you highlighted Brian's apple stuffed chicken. I HAVE since tried the pairing and it is delish!
Thanks for hosting the casserole theme. I picked up some great ideas. Your casserole makes me think of a corn dog type flavor. Who can resist that?
Hm, I love casseroles, but have pretty much given up on them since I don't eat beans, potatoes, or cheese...maybe it's time I give a breakfast casserole a try!

Linda I really love your web site - i just found it!! I also commiserate with you for all your maladies. However, you are lucky because the best Nutrition doctor in the country (or one of the best) has his office right there in Durham - his name is Dr. Walter Schmitt, DC. Unfortunately it takes a year to get into his office, but if you call and ask for a referral, I know his niece (or someone) was trained by him after they got out of chiropractic school - His techniques will truly save your life not to mention a lot of grief! Good luck and keep putting out great gf/cf recipes!
