French Toast – What can I eat that’s gluten free?

This week’s edition of “What can I eat that’s gluten free?” has a breakfast theme.  But don’t worry, if you have a different type of post to link up, that’s fine too.  If you’ve never participated before, please read the guidelines here.



A couple of years ago my husband was on a business trip and staying at a hotel.  A couple of their French customers were also there.  One morning he told the lady from France that she should try the French bread because it was really good.  She ended up explaining that in France it is called lost bread because they use bread that is old and bad--lost to all other uses.  When she learned that we use perfectly good bread, she gave it a try and was pleasantly surprised.

As a gluten-free baker I often have lost bread.  Not because it is old, but because it is too dry or too wet and has sunk in the middle.  I don’t let it go to waste, though, and French bread is one of my favorite ways to use it.  Here’s an example of French toast made from one of those sunken loaves.

I don’t have a recipe.  I just mix some egg, milk, salt, and sometimes cinnamon in a bowl, dip slices of bread in the mixture and fry it on a skillet.

Well Mr. T raved about your French toast so I know it must be good! He is my pickiest eater.

We really like Gillian's Cinnamon Raisin rolls, cut into three rounds per roll and used for French Toast.
 
I usually eat fruit and cottage cheese, maybe fruit and a protein based muffin, or sometimes eggs and fruit. Lots of fruit around here, I guess. I've found that my body seems to be happiest with a carb, a protein, and some fat.
 
Love French toast. I agree, there's always plenty of lost bread when you're eating gluten-free. I've used some of the drier gf breads you can buy at the stores. Soaking slices in the milk and egg perks them up and helps hold the bread together!
 
We eat pancakes A LOT at our house. We eat breakfast for dinner more than we eat breakfast for breakfast!

I like to make french toast ahead and freeze individual slices, then in about an hour put them back into a loaf in one bag to freeze. That way I can grab one at a time and toast them! It's great because the kids can do it by themsleves.

I just noticed, I should have spelled out "mushroom" it looks like I'm serving Mush, ack!

I made french toast this morning out of some slightly old but hearty banana bread. It was great!
 
I love french toast, but rarely have it. In my house, french toast will happen maybe a couple of weekends a year, usually on special occasions =D.
 
I usually only make what I consider a big breakfast (like French toast) for company or special occasions. The two recipes I shared, Hash Brown Breakfast Casserole and Volcano Pancake, fit that category for me. However, lots of folks make my Volcano Pancake at the drop of a hat ... just for snack even. LOL I'd probably eat them for dinner if Mr. GFE was more of a breakfast for dinner guy. Whenever I make pancakes or waffles, I make plenty to go in the freezer (separated by wax paper), so I can just pull them out and put in the toaster if I want though. Most of my breakasts consist of the following: green smoothies, a single fried egg or omelet, and leftovers.

Since I very rarely use or make regular loaf bread, I really like Brenna's idea for using leftover banana bread for French Toast ... I'm definitely doing that! It reminds me of a recipe I made years ago called Tropical French Toast where you dipped the bread in a banana egg mixture.

Since this is my first time participating, I hope I did everything correctly. :-)
